# Strawberry Matcha Latte

A strawberry matcha latte is a layered iced latte with strawberry purée at the bottom, cold milk in the middle and matcha on top: fruity-sweet and creamy, with the gently bitter, green note of the matcha. You need ripe strawberries, 2 g of matcha, 30 ml of water and 200 ml of milk or oat drink. Stir it only just before drinking so the layers stay visible in the glass.

## Ingredients

-   **80 g** ripe strawberries
-   **10 g** sugar or maple syrup, to taste
-   ice cubes
-   **200 ml** cold milk or oat drink
-   **2 g** matcha
-   **30 ml** water, about 75 °C

## Method

1.  Wash and hull the strawberries and mash them with the sugar or maple syrup using a fork, or blend them briefly.
2.  Put the strawberry purée into a large glass and fill the glass with ice cubes to just below the rim.
3.  Slowly pour the cold milk over the back of a spoon onto the ice.
4.  Put the matcha through the sieve into a bowl and whisk it with the 30 ml of water until smooth and foamy.
5.  Finally, pour the matcha slowly over the back of the spoon onto the milk, and stir only just before drinking.

## Variations and tips

-   **Matcha plays the lead:** If fruit and syrup dominate, you hardly taste the powder any more. If you can no longer taste the matcha, use less purée or a little more powder; if it is too bitter for you, use more purée. If the whole drink tastes flat, try the matcha straight for comparison, because if the powder is the cause, no syrup will help.
-   **Strawberry syrup instead of purée:** Homemade syrup from strawberries and sugar tastes fresher than much of what comes in a bottle: bring sugar and water to the boil, let the strawberries steep in it and strain. A good ready-made syrup has a short ingredient list with real fruit.
-   **Frozen berries:** Cook frozen strawberries, raspberries or blueberries through thoroughly with a little sugar before puréeing, and let the compote cool before it goes into the glass. Raspberry and blueberry work exactly like strawberry, and ready-made raspberry purée is also sold in small jars. With oat drink the result is especially creamy and mild.
-   **Neat layers:** The purée goes into the glass first because it is the heaviest and stays at the bottom. The ice cubes slow down the next layer, and you pour milk and matcha slowly over the back of a spoon. That creates a gradient from red through white to green.
-   **Balancing sweetness and acidity:** If it tastes too sour, a little more syrup or milk helps; if it is too sweet, dilute it with a little milk or unsweetened matcha. Straight and unsweetened, matcha shows its character most clearly, while a little sweetness rounds off the bitterness, so taste the purée with a spoon first. If you want to recreate a version you drank somewhere, work towards the amounts in this order: fruit, sweetness, milk, matcha.
-   **Two colours with mango:** Strawberry and mango together make a two-colour layered drink if you put both purées at the bottom of the glass and keep the matcha on top. The mango purée is in the mango matcha latte recipe.
